Barbecoa's traditional butchery, supplying best quality fresh meat cuts to the public and to their own restaurant. An aging room allows them to age meat to about 5 weeks (a week longer than the average), giving greater flavour. Sourcing is a high priority too, with animals hand-selected from small-scale local producers.
